Asparagus Sabzi (Indian style)


Asparagus is one of the ancient vegetables known. The health benefits of this vegetable is enormous. Asparagus is regarded as a ‘clean vegetable’ as the pesticide residue is considerably less. Apart from this , the vegetable is very rich in Vitamins B6, C and K. Another important nutrient value of asparagus is that the vegetable is ‘anti-inflammatory’; above all it is a low carb, low sodium and high in fiber. This vegetable has all the terms any diet conscious person would look out for.

Often asparagus are seasoned and baked. But this ‘Asparagus Sabzi’ recipe is spicy and rich in flavors and goes well with roti or rice. Let us jump to the recipe.


  • 2 cups chopped asparagus
  • 1 medium sized onion
  • 1 medium sized tomato
  • 1/2 tsp turmeric powder
  • 1 tsp of red chili powder
  • 2 tsp. of coriander powder
  • 1 tbsp. of olive oil
  • 1 tsp. of kasthuri methi powder (optional)
  • 1/2 tsp. mustard seeds
  • 1/2 tsp. urad dhal


  • Add 1 tbsp. of olive oil in a frying pan. Once the oil heats up ,add mustard seeds and urad dhal.
  • Once the mustard seeds fully sputter, add chopped onions and fry them well until they turn golden brown.
  • Add tomatoes and fry them well along with the onions.
  • Add turmeric powder, red chili powder ,coriander powder into the onion/tomato gravy and fry for a minute or less.
  • Add 1/4 cup of water.
  • Add chopped asparagus.
  • Add salt as per need. Now let them cook with closed lid. Make sure to stir them once in 2 minutes so the sabzi is not burnt.
  • The sabzi tastes good if it’s a little bit crunchy. Check the texture of the cooked vegetable after 8-10 minutes of cooking. If you like the sabzi a little mushy let it cook for some more time. Usually, the desired consistency is achieved in 10-12 minutes of cooking.
  • Finally, add a lavish sprinkle of kasthuri methi.
  • Serve it with hot roti or rice.
