Homemade Mexican rice bowl

This lock down has made us crave for many things; our social life, restaurants, parties – all that we had taken for granted so far. On the flip side, people have also started trying their hands-on different things staying at home, especially cooking.

Trying out new recipes have been my stress buster off late. I had tried chipotle style rice bowl and quesadillas as our family really missed eating them. It turned out pretty good. Now we have an economical homemade rice bowl, yay!

Let’s jump to the recipe.

Ingredients (for 4)

½ cup black beans

¾ cup of rice

Sour cream

1 bell pepper (finely chopped)

1 onion (finely chopped)

2 big tomatoes

2 green chilies (optional)

1 tablespoon lemon juice

1 cup of mozzarella cheese

1 big avocado (Ripe)

½ cup of corn (optional)

cilantro (finely chopped)

Spicy salsa/chili sauce (optional)

Preparation ( 30 mins)

Beans and rice

Steam rice and beans. I used kidney beans instead of black beans as it was available in my pantry. Kidney beans and rice can be cooked together under high pressure in Instapot (for 12 mins) or a pressure cooker. The bean can be spiced up with salt and a little bit of tamarind juice. If you are using canned beans, then it is just the rice that needs to be steamed.

Make sure to add a few drops of oil when rice is seamed, so they do not stick to each other. Apart from rice two other important preparation part in this bowl are guacamole and fajitas.


The taste majorly depends on the type of avocado used. Make sure that the fruit is neither too hard nor fully ripe. Once the fruit is scooped out of the peel, use two forks to poke them well so the fruit can absorb all the spices added. Add chopped chilies, onion, bell pepper, tomatoes (half of the chopped), coriander, pepper, and salt. Mix them well and make it a smooth paste and top it with a tablespoon of lemon juice. (refer the image below).

Veggie Fajitas:

Heat a pan with one tablespoon of oil and add ½ a cup of chopped onion and bell pepper combined. Sprinkle some salt and ½ a teaspoon of chili flakes and fry them until they turn soft.I used finely chopped bell pepper and onion instead of strips, so kids could eat them.

Now, just layer all these ingredients in a bowl one on top of the other. Fill a bowl with a layer of rice, bean, tomatoes,sour cream, fajitas, guacamole, chili sauce, corn and finally some cheese. If you would like to add lettuce, sprinkle some finely chopped lettuce and enjoy the delicious rice bowl.

Serve the bowl along with a cheese quesadilla.
